TOMATO CHINESE SOUP

As an easy one, you can try on the creamy tomato soup recipe: first melt butter in a big pot over medium heat; then add thyme, onion, and garlic; cook until onion is soft and translucent; augment heat to medium-high; add tomato paste; keep cooking until paste has begun to caramelize in spots; add tomatoes with juices, sugar, water; bring to a simmer; simmer until flavors meld and soup reduces to about 2 quarts; stir in 1/4 cup cream; simmer soup until flavors meld; season with salt, pepper, and sugar to taste. You may also want to try this homemade  tomato soup recipe: first preheat oven to 450 degrees F; then strain the chopped canned tomatoes, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes.
Meanwhile, heat remaining olive oil over medium-low heat in a saucepan; then add the celery, carrot, onion and garlic, cook until softened; add the roasted chopped canned tomatoes, chicken broth, bay leaf and butter; simmer until vegetables are very soft; puree with an immersion blender until smooth.

Finally, you can also try this roasted tomato soup recipe: preheat oven to 375F; put all vegetables on baking sheet and drizzle olive oil all over; roast for 20 minutes; roughly chop all vegetables; then add all vegetables, smoked paprika, garlic powder, salt, pepper, vegetable broth and grated cheese to pot large enough so that when you use your immersion blender, it doesn't splatter all over the place; blend in pot until you get a nice puree; bring to simmer, taste and adjust seasoning.
